What’s for Breakfast?

We get asked this question quite often.  The answer depends, quite honestly, on several things.

1.  Are there any dietary restrictions we need to accommodate?

Personally, I hate being the one person who is single out at any event.  So, if someone at the table is gluten free, I’m sorry, but you’re all eating gluten free for a meal or two.  Will you know that?  Nope.  I don’t broadcast that the meal is gluten free, I just let the one person know that they are able to enjoy it.

2.  What day is it?

Bread or Eggs?  See – we alternate our main course daily.  Between something savory, an egg dish of some sort, and something sweet, a bread based entree.  As always, we start breakfast with one of several options, it might be Mr. Carriage Corner’s signature fruit cup, a parfait made with freshly made granola

3.  How many guests are there?

There are some things that I won’t make when we have a full house.  Mainly because they are too time consuming or it just takes too much time to do it correctly.  Examples of this would be the following:  Baked potato waffles; bacon; and or poached eggs.

4.  What’s in Season?

I always take into account what’s in season currently as far as fresh fruit and veggies.

There’s a couple reasons for this.  The main one is that our kitchen is open to guests and it’s a standard home kitchen.  I don’t have any official training nor a commercial kitchen.  It would be incredibly hard for me to cook 5 different dishes and have them all ready at the same time with everyone watching me make a huge mess.  Trust me when I say, I make a big enough mess doing just one main dish.

Next, when we used to go away and stay at bed and breakfasts, I honestly liked the surprise of finding out what’s for breakfast.  I did have a few unfavorable reactions including:  nothing but bagels and lox and surprising good – pork chops with eggs & potatoes.  Also, if we serve something that you absolutely do not like and forgot to mention, we are happy to scramble up some eggs or offer you the ever present cheerios.

Have you stayed with us?  If so you can probably guess the answer.  If not. let me tell you.  We have one huge, beautiful dining room table.  I believe it gets a little awkward for people who arrive later to breakfast to join the table.  Although we always accommodate guests who are late.  Also – see Why Chef’s Choice above.  Because of the size of our home and the floor plan, there really isn’t the ability to add more tables and let people chose when to eat.

Isn’t the point of staying at a B&B to meet other people?  How do you do that if you are eating by yourself?  The communal table encourages conversation, laughter and lingering over breakfast.

If you follow us on facebook  or Instagram you may notice that I often use the hashtag #freshisbest or #eatyouryard I am always trying to find ways to serve up what is currently being picked from the garden – you may have been served a side salad with lettuce picked that morning from the back deck; fresh basil on your freshly picked tomatoes; butternut squash that we grew added to your breakfast hash or hashbrowns.  This summer I developed a recipe for Zucchini Spice muffins and the zucchini came from the garden.

I would say that 9 times out of 10 if there is jam on the table, I’ve made it from fruit that was either grown by Mr. Carriage Corner or that we picked locally.

On top of that – we source our eggs from a local farm right down the road – these are cage free hens and they eggs are super fresh.  We buy butter and milk from Lapp Valley Farm.  Fruits and Veggies that we don’t grow ourselves we get from the local fruit stand at the nearest farm.  Oh, and that balsamic that we put on the fruit?  It comes from The Olive Basin at Kitchen Kettle!  The only thing we haven’t successfully sourced yet is good local pork – because let’s face it, pork is really the only breakfast meat.  Well, unless it’s Father’s Day and we’re grillin’ up some steak and eggs.
